A cold pre-fermentation cryomaceration follows for about 24 hours in order to extract the most typical aromas of the vine. The free-run must thus obtained, after adding selected yeasts, is sent to fermentation which takes place at a controlled temperature between 24° and 26°, for about 15 days, 10 of which in contact with the skins.
