Ancestral Method

The ancestral method is an ancient sparkling wine production process that has deep roots in winemaking tradition. It is thought to be the first method used to produce sparkling wines, mainly in the Champagne area and other wine regions.

The ancestral method, also known as the “traditional method” , dates back to ancient times. Tradition has it that in our grandparents’ time, sparkling wine was produced by letting the wine referment naturally in the bottle, thanks to the residual sugar left after the winemaking process. This traditional method is today known as the “ancestral method”.

In the ancestral method, disgorging is not carried out and therefore, these wines appear cloudy with fairly pronounced hints of bread crust, due to the greater presence of yeasts.
