Name : Sparkling Wine

Notes: Complex aroma in continuous evolution given by the refinement on the yeasts. The hints of ripe fruit, bread crust, yeast are the most representative. Extremely dry taste, but the maturation on the yeasts gives a surprising softness and roundness, in balance with elegant acidic notes that give freshness.

Vinification & Aging: soft pressing and static decantation. First fermentation in steel at controlled temperatures with selected yeasts, the second in the bottle. Aging in bottle for 6 to 12 months. Sugars: minimal traces.

Pairings: Excellent choice for aperitifs, but suitable for the whole meal. Ideal as a pairing with light first courses, fish-based dishes and white meats.
