“No Mistake Old Tom” is an expression of Citadelle gin based on an Old Tom style; sweeter than a London Dry, but still dry than a Genever. Placed in copper cauldrons, this sugar is first toasted, undergoing an initial caramelization process, then lightly browned and added with alcohol before being aged for 3 or 4 months. All that remains is to select the Citadelle Reserve barrels that are characterized by their floral tone and add 35-40 grams of aged Caribbean sugar. The whole thing is then mixed and left to rest for a few months in barrels.
