Name : Dolcetto di Ovada DOCG

Notes : Fruity on the nose, with notes of ripe cherry, violets and undergrowth. On the palate it explodes with freshness, enveloping and with soft tannins.

Vinification & Aging: the harvest is from mid-September, manual in perforated crates. Vinification in thermo-conditioned stainless steel tanks, with a duration varying from 7 to 14 days with pumping over and delestage. Subsequent aging on the fine lees in glass-lined concrete barrels.

Pairings : It goes well with first courses, vegetable soups, white meats and semi-mature cheeses.
