Notes: Complex aroma in continuous evolution given by the refinement on the yeasts. The hints of ripe fruit, bread crust, yeast are the most representative. Extremely dry taste, but the maturation on the yeasts gives a surprising softness and roundness, in balance with elegant acidic notes that give freshness.
Vinification & Aging: soft pressing and static decantation. First fermentation in steel at controlled temperatures with selected yeasts. Aging in cement and steel tanks from 30 to 180 days. Aging in bottle 100 days. Sugars: 6-8g/l.
Pairings: Excellent choice for aperitifs, but suitable for the whole meal. Ideal as a pairing with light first courses, fish-based dishes and white meats.

Aroma complesso in continua evoluzione dato dall’affinamento sui lieviti. I sentori di frutta matura, crosta di pane, lievito sono i più rappresentativi. Gusto estremamente secco, ma la maturazione sui lieviti conferisce una morbidezza e rotondità sorprendenti, in equilibrio con eleganti note acide che conferiscono freschezza.
Abbinamenti gastronomici +
Ottima scelta per gli aperitivi, ma tipologia adatta a tutto pasto. Ideale come abbinamento a primi piatti leggeri, piatti a base di pesce e carni bianche.
Vinificazione e affinamento +
Vinificazione. Pressatura soffice e decantazione statica. Prima fermentazione in acciaio a temperature controllate con lieviti selezionati.
Affinamento. Affinamento in vasca di cemento e acciaio da 30 a 180 giorni. Affinamento in bottiglia 100 giorni . Zuccheri: 6-8g/l.
