Notes : Creamy foam with fine and persistent perlage. On the nose it is fragrant and immediate, with floral and fruity notes that recall apple and white-fleshed peach. On the palate it is characterized by its liveliness and freshness accompanied by a good balance.

Vinification & Aging: The 'flower' must was subjected to the first alcoholic fermentation in stainless steel tanks. The second fermentation in the bottle in contact with the yeasts took place in the following 24 months.

Pairings : To be paired with appetizers and raw fish.
