Notes: Aromas of morello cherry, black pepper and spicy, vanilla notes. On the palate it is very round and fresh. Long and woody finish. Delicate tannins.

Vinification & Aging : Mechanical harvest followed by strict selection to preserve only the best berries. Vinification without added sulphites, at low temperature. Fermentation in stainless steel vats then aging for 12 months in barriques.

Pairings: game stew, cheese fondues, mature cheeses.
