Name : Sicilia Rosso DOP

Notes: On the nose, evident floral and fruity hints attributable to the
marasca. It closes with spices and aromatic vegetables such as nettle and fig leaf. In the mouth it is soft, elegant and velvety, with an exceptional persistence.

Vinification & Aging: Selection of the bunches on the plant and manual harvesting, in 14 kg crates. The grapes are destemmed and then transferred to horizontal and vertical vinifi ers where the must, after a medium-long maceration on the skins, completes the alcoholic fermentation. The malolactic fermentation was carried out partly in oak barriques and partly in steel tanks. Maturation for 24 months, partly in oak barriques and partly in steel.

Pairings: Perfect with vegetable preparations, roast meats, game, medium and long-aged cheeses.
