Name: Pays d'Oc PGI

Notes : Olfactory attack rich in vanilla scent and smoky notes. Nice persistence in the mouth with a presence of bread crust and butter. Elegant, powerful and harmonious.

Vinification & Aging: Vineyards on basaltic soil. Mechanical harvesting of the grapes at night and on dry days and carried out in two stages, to avoid oxidation of the grapes. Skin maceration, Leavening only with neutral yeasts, fermentation at low temperature for 15 days. Pneumatic pressing. Aging in French oak barrels.

Pairings : It pairs perfectly with all egg-based appetizers and fresh sauces. Excellent with shellfish and noble fish, even with grilled poultry.
