Name: Pays d'Oc PGI

Notes : Floral and fruity aromas, white flowers and fruits such as pear and apple with notes of butter and hazelnut. Excellent correspondence between taste and smell.

Vinification & Aging: Vineyards on basaltic soil. Mechanical harvesting of the grapes at night and on dry days and carried out in two stages, to avoid oxidation of the grapes. Skin maceration, Leavening only with neutral yeasts, fermentation at low temperature for 15 days. Pneumatic pressing.

Pairings : It pairs perfectly with seafood, oysters, grilled fish, cheese fondues and raclette, goat cheeses and smoked hams.
