Notes : A strong aroma of yeasts, bread crust and ripe fruit, finishing with a very persistent taste, while maintaining an incredible freshness and minerality.

Vinification & Aging: The must is obtained by soft pressing of the grapes and then collected in steel tanks, where the first alcoholic fermentation takes place, controlled by low temperatures (15-16 °C) to enhance the aromas and finesse of the wine. The Cuvée de Le Cantorie is obtained only in particularly fine years, through the meticulous selection of the must. 10% of the selected must is fermented in barriques and left for a minimum of three months, in batonage on its noble lees, then after the second fermentation it faces a long refinement of 68 months of permanence on its yeasts. The lack of addition of the liqueur d'expedition means that in the glass you find all the purity and elegance of the Franciacorta base wine characteristic of the Gussago area. Dosage: 0g/l
