Name : Etna Rosso DOC

Notes: The nose presents red berries such as raspberry, wild strawberries and blackberries and turns towards herbal notes such as mallow, thyme and juniper accompanied by mineral sensations. On the palate it is very broad, the tannins are perfectly balanced and the finish is long and delicately balsamic.

Vinification & Aging: The vinification takes place through soft destemming and maceration in contact with the skins at a controlled temperature of 28°C for approximately 25–30 days. Fermentation is at a controlled temperature of 26-28°C with constant
pumping over and punching down. Malolactic fermentation then takes place in French oak barrels. Aged for 8 months in large French oak barrels.

Pairings: Mushroom-based dishes, white meat sauces, semi-mature cheeses.
