Notes : On the nose it opens slowly with hints of black cherry, raspberry, blackberry and violet. Followed by youthful vinous notes. On the palate the sip is pleasant and enveloping, with good flavour, characterised by a still young but velvety tannin. Intense and fruity finish.

Vinification & Aging: Once the harvest is over, the freshly picked grapes are taken to the cellar and destemmed. The free-run must thus obtained, after adding selected yeasts, is sent to fermentation which takes place at a controlled temperature between 24° and 26°, for about 15 days, 10 of which in contact with the skins. The resulting wine rests in vitrified cement tanks, where it ages for 5/6 months, before bottling.

Pairings: Venison stew with red berry reduction. Seitan stew with red berry sauce and celeriac puree.
