Vinification & Aging: Sustainable viticulture. Traditional manual harvesting. Partial carbonic maceration, frequent pigeage, use of indigenous yeasts with pumping over. Aging in oak barrels and refining in stainless steel tanks. Aging on the lees.

Pairings : Excellent with red meats in sauce, steak, game, tasty cheeses.
