Name: Organic Merlot Wine
Notes : Rich and intense nose with hints of black cherry, raspberry and violet. Followed by hints of wet earth, rhubarb and green pepper. The sip is full and structured, supported by pleasant and well-integrated tannins. The finish lingers with aromas of ripe fruit accompanied by elegant sapidity.
Vinification & Aging: Once the harvest is over, the freshly picked grapes are taken to the cellar and destemmed. The free-run must thus obtained, after adding selected yeasts, is sent to fermentation which takes place at a controlled temperature between 24° and 26°, for approximately 15 days, 10 of which in contact with the skins.
Pairings: Baked guinea fowl morsels with potatoes.

Olfatto ricco e intenso con ricordi di amarena, lampone e violetta. Seguono sentori di terra bagnata, rabarbaro e pepe verde. Il sorso è pieno e strutturato, sorretto da tannino piacevole e ben integrato. Nel finale persistono gli aromi di frutta matura accompagnati dall'elegante sapidità.

Bocconcini di faraona al forno con patate.
Vinificazione e affinamento +
Vinificazione. Terminata la vendemmia, l’uva appena raccolta viene condotta in cantina e diraspata. Il mosto fiore così ottenuto, aggiunti i lieviti selezionati, viene avviato alla fermentazione che si svolge a una temperatura controllata tra i 24° e i 26°, per circa 15 giorni di cui 10 a contatto con le bucce.
Affinamento. Affinamento in acciaio.
