Name: Recioto della Valpolicella DOCG

Note: This wine has great structure, a characteristic aroma with a harmonious and velvety taste.

Vinification & Aging: A wine of ancient Veronese tradition, it is born from the vinification of selected bunches (once parts of bunches, the so-called “recie”). After the harvest, the grapes undergo drying for at least 4 months with a weight loss of at least 40%. The fermentation temperature is between 18°-22°C. Then follows a 6-month refinement in steel.

Pairings: It pairs well with all dry desserts such as sbrisolona, ​​cantucci, zaletti and with bitter chocolate. Very interesting, although different in nature from the previous one, is the pairing with blue cheeses or spicy cheeses with spicy fruit sauces.
