Notes : Fragrant and delicate olfactory profile with essences of rose petals, white peach and small red fruits. Beautiful concentration in the mouth with memories of wild strawberry, peach and lemon. Well balanced by fresh acidity, juicy finish with a touch of Mediterranean salinity.

Vinification & Aging: After the harvest, the freshly picked grapes are taken to the cellar, destemmed and softly pressed. The must macerates on the skins long enough to give the wine its classic pink hue. Once selected yeasts are added, fermentation begins at a controlled temperature of between 16° and 18° for about 10 days. The resulting wine rests in steel, where it ages for 5/6 months, before bottling.

Pairings: Salmon carpaccio marinated in citrus fruits.
