Name: Sannio DOP

Notes: pleasant aroma with hints of ripe fruit, with some notes of strawberry and raspberry. Light hints of spices. On the palate it is dry, harmonious and velvety.

Vinification & Aging: The grapes are hand-picked and taken to the cellar; destemming and soft pressing follow. The pure vinification is carried out with maceration on the skins with pumping over for about 20 days; fermentation takes place in stainless steel at a controlled temperature. The wine is then refined in large Slavonian oak barrels for at least 6 months. Maturation continues in the bottle.

Pairings: It pairs well with red meats, game and medium-aged hard cheeses, but also with well-structured first courses of meat.
