Notes : Creamy foam with fine and persistent perlage. On an aromatic level it is fragrant and decisive, characterized by the unmistakable peculiarity of Pinot Noir, with vague hints of dried wild flowers. On the palate it is distinguished by its freshness.

Vinification & Aging: The 'flower' must was subjected to the first alcoholic fermentation in stainless steel tanks. The second fermentation in the bottle in contact with the yeasts took place over the following 24 months.

Pairings : To be paired with spaghetti with seafood, sautéed mussels, amberjack tartare.
