Notes : Fine and elegant bouquet, with floral notes of wild flowers that evolve into fruity aromas of white peach and plum. The taste is savoury and creamy, revealing the same aromatic notes perceived on the nose. Balanced finish and good persistence.

Vinification & Aging: Cooling of the harvested grapes using a cold room. Loading of whole, unstemmed bunches into the press, soft pressing in the total absence of oxygen. Subsequent fermentation with a stable temperature of 12°C. Medium Charmat sparkling wine making method, with very slow secondary fermentation through the inoculation of selected yeasts. Aging in an autoclave, in contact with the yeast while stirring for 45 days.

Pairings : Perfect with fish-based dishes, raw seafood, oysters.
