Notes : On the nose, an important bouquet composed of cherry, mineral notes and spices, among which pepper stands out. On the palate it is fresh with a pleasant minerality that makes it tasty and savoury. The tannins are balanced and integrated. The notes perceived on the nose return on the finish.
Vinification & Aging : Harvest entirely by hand. Fermentation in stainless steel at controlled temperature, with maceration on the skins. Aging for 10 months in French oak barriques, followed by bottle aging.
Pairings : A perfect ally to taste with game and venison dishes, mature cheeses and first courses with meat ragù.

Note di degustazione +
Al naso un importante bouquet composto da ciliegia, note minerali e spezie, tra le quali spicca il pepe. Al palato è fresco con una piacevole mineralità che lo rende gustosamente sapido. I tannini sono equilibrati ed integrati. Sul finale ritornano le note percepite al naso.
Abbinamenti gastronomici +
Un perfetto alleato da degustare insieme a pietanze a base di cacciagione e selvaggina, formaggi stagionati e primi piatti con ragù di carne.
Vinificazione e affinamento +
Vinificazione. Vendemmia interamente a mano. Fermentazione in acciaio inox a temperatura controllata, con macerazione sulle bucce.
Affinamento. Affinamento per 10 mesi in barriques di rovere francese, segue affinamento in bottiglia.
