Notes : A true mosaic of fruit on the nose: aromas of raspberry, wild strawberry, cherry. Notes of peach and quince complete this fruity bouquet. This wine is characterized by a creamy effervescence, a magnificent volume in the mouth and a long aromatic persistence. A beautiful acidity and salinity accompany the fruit and berry flavors.

Vinification & Ageing : grapes from 19 Crus: mainly Aÿ and Verzenay for the Pinot Noir, Chouilly and Oiry for the Chardonnay. 5% of La Côte aux Enfants red wine. Exclusive use of the cuvée. Fermentation entirely in barrels. Maturation under cork, for a maturation time in the cellar more than twice as long as the rules of the appellation.

Pairings : Red tuna tataki, wild strawberries and cherries. Blue lobster, wild strawberries and raspberries. Roast duck breast, apple compote and quince.
