Name: Friuli Colli Orientali DOP
Notes: On the nose, hints of apple and white flowers. The taste is dry, fruity and with moderate acidity.
Vinification & Aging: Manual harvesting of the grapes, which are destemmed, pressed and left to macerate for about 38 days in terracotta amphorae. During this period, a series of manual pumping overs are performed every day. This operation serves to promote oxygenation and the passage of color. Once the period in which the must has remained in contact with the skins is over, racking and pressing takes place. The must thus obtained is placed in a stainless steel tank at a controlled temperature for about 1 week. The maturation of the wine will continue in the amphora for about 1 year until bottling, which usually takes place in the summer. It will then be left to refine in the bottle for at least 1 year, before being put on sale.
Pairings: With seasoned raw ham, with oven-baked asparagus, with herb-based first courses, with baked shellfish flavored with herbs (thyme, oregano, marjoram) and with baked or grilled white meats.
