Appellation: Pouilly-Fuissé AOC

Notes : Dry wine with delicate aromas of white flowers and citrus that evolve towards notes of hazelnut, almond, then vanilla and flint during aging. The nose is fine and elegant, the mouth is full and generous.

Vinification & Ageing: Located exclusively on the slopes, the vineyard offers a unique vintage: Chardonnay, the noble variety of all the great white Burgundy wines. Stretching like a belt along the southern edge of the Mâconnais, the soils offer a wide variety of substrates, mainly limestone, and many different exposures due to the extreme fragmentation of the plots. Manual harvesting, followed by soft pressing, followed by fermentation at controlled temperatures. Analytical monitoring of the vintages is carried out and in particular to protect quality: Pouilly-Fuissé is the subject of careful vinification and rigorous selection of vintages. Part of the vintage is aged in barrels for 12 months then assembled with the remainder for a further 6 months of ageing in vats.

Pairings : Excellent as an aperitif or during the meal to accompany cooked fish and shellfish. It also goes well with gnocchi, white meats or creamed poultry.
