Note: Fruity with notes of cherry and raspberry and with a good structure.
Vinification & Aging: The bunches are destemmed, pressed and transferred to the vinification tank, where they remain cold for 24 hours "cold maceration" to extract the aromatic part. Afterwards, the alcoholic fermentation begins, and finally it is completed with a few days of maceration. The wine obtained is left to mature in wooden barrels.
Pairings: Excellent with red meats, especially game, strong-flavoured roasts and grills.

Fruttato con note di ciliegia e lampone e con una buona struttura.
Abbinamenti gastronomici +
Ottimo con carni rosse, in particolare cacciagione, arrosti dal sapore deciso, grigliate.
Vinificazione e affinamento +
Vinificazione. I grappoli vengono diraspati, pigiati e trasferiti nel serbatoio di vinificazione, dove rimangono a freddo per 24 ore «macerazione a freddo» per poter estrarre la parte aromatica. Successivamente inizia la fermentazione alcolica, ed infine si completa con alcuni giorni di macerazione.
Affinamento. Il vino ottenuto viene messo a maturare in botti di legno.
