Notes : Fine and delicate. Fresh to the taste, nice flavour, fruity and delicately tannic finish.

Vinification & Aging: Cooling of the harvested grapes using a cold room. Loading of whole bunches of grapes into the press, soft pressing in the total absence of oxygen and a 4-hour rest for maceration. Subsequent fermentation with a stable temperature of 13°C. Aging for 3 months in steel on the fine lees at a controlled temperature and one month of refinement in the bottle.

Pairings : To be paired with white meat dishes and grilled fish.
