Notes : Fine and delicate. Notes of white flowers alternate with intriguing hints of ripe white pulp fruit and iodine. The taste is fresh, savoury, with excellent aromatic and gustatory persistence. A versatile wine, with a fluid and satisfying drinkability.

Vinification & Aging: Cooling of the harvested grapes using a cold room. Loading of whole bunches of grapes into the press, soft pressing in the total absence of oxygen and a 4-hour rest for maceration. Subsequent fermentation with a stable temperature of 13°C. Aging for 3 months in steel on the fine lees at a controlled temperature and one month of refinement in the bottle.

Pairings : Pair with deconstructed aubergine parmigiana, spaghetti with clams and bottarga.
