Vinification & Ageing: The art of producing an exclusive champagne must be equally unique and respectful of all the production phases. It requires first of all superior quality grapes: Grand Cru Chardonnay from the Côte des Blancs, Grand Cru Pinot Noir from the Montagne de Reims and Premier Cru Pinot Meunier from the Marne Valley. The perfect ripening of the grapes together with their excellent quality are elements of fundamental importance, without forgetting the love of a unique terroir and the family secrets resulting from the know-how passed down from generation to generation. Fueled by tradition and an intimate knowledge of the region, Carbon has had the time to explore and reinvent Champagne, creating an elixir aimed at excellence and perfect balance. The grapes, after being carefully selected, are harvested by hand and pressed with a traditional 4000 kg press which allows the selection of the best quality juices (1st cuvee). The vinification of Blanc des Blancs 2009 is carried out in tanks at low controlled temperatures (16-18 °C allowing to maintain the structure and delicacy of the wine). Bottling is done in April and all the wines are then transferred to our cellars to age for 7 years. Dosage 7g/75cl for a vintage shaped with extreme passion taking advantage of the contribution of the reserve wines and the time spent in the cellar.
