Denomination: Alta Langa DOCG
Notes: Light notes of fruit, especially pear and peach, hints of toasted dried fruit and fresh bread. On the palate it is very elegant and creamy, with a dry aftertaste. Long and persistent, a taste rich in savory and citrus sensations.
 Vinification & Aging : soft pressing of the whole bunches and use of only the first fraction of the must obtained (first pressing must).
 Fermentation at controlled temperature (18°) in stainless steel for 10-15 days and subsequent permanence of the base wine on its own yeasts at low temperature until the following spring. 
Tirage (“prise de spuma”) in spring for the second fermentation: the bottles are sealed with crown caps and stored, stacked and away from light, inside the cold underground cellars (12°) for a long period of refinement on the fine yeasts (at least 30 months).
Pairings: serve as an aperitif or paired with light starters or fish-based dishes.
