Notes : Aromas of red fruit, black cherries with notes of pepper and herbs. The taste is soft and fruity, the tannins are elegantly structured. Fresh finish.
Vinification & Aging: The grapes were harvested slightly overripe and vinified in thermo-conditioned stainless steel tanks where alcoholic fermentation took place at a controlled temperature not exceeding 26 °C. Maceration continued for a further 8-10 days. Malolactic fermentation was completed by the beginning of winter. This was followed by a maturation period in steel of approximately 8 months.
Pairings: Apulian bombette, roast and grilled meat, game.
