Vinification & Aging: the must is obtained by pressing the selected grapes and is then collected in steel tanks, where the first controlled alcoholic fermentation takes place using low temperatures (15-16 °C) to enhance the aromas and finesse of the wine. Eight months after the harvest, the Cuvèe de Le Cantorie is prepared and bottled, scrupulously following the classic Franciacorta method.
