Notes : It emerges fragrant with fruity tones of white peach, wild strawberry and pink lady apple, in the background delicate traits of dog rose stand out. The sip is decisive and dry, well balanced and with a pleasant fruity finish.

Vinification & Aging: Once the harvest is over, the freshly picked grapes are taken to the cellar and destemmed. The Pinot Noir grapes, after a soft pressing, are left to macerate in contact with the skins until they reach the desired color tone. The process then continues with the racking and fermentation of the musts, which takes place at a controlled temperature between 16° and 18°. Finally, a Cuveé is prepared between Glera (85%) and Pinot Noir (15%) which will be fermented again, for the second fermentation, with the Martinotti Method.

Pairings: Rye bread crouton, sour cream, smoked trout, chives. Sweet vegetable dip with salt and pepper.
