Note : The low sugar content enhances the pure Chardonnay blend, citrus notes and fresh flavour.
Vinification & Aging: The grapes are hand-picked in 20 kg crates, usually in the last ten days of August. The whole grapes are pressed and the free-run must is separated (grape/must yield: approximately 45%). The first fermentation takes place in steel with indigenous yeasts at a temperature of approximately 16-18 °C. It then rests on the fine lees until the following spring when the tirage takes place. Disgorging takes place after at least 42 months on the lees, with annual rotation of the stacks. Before being put on the market, it is left to rest for at least 3 months.
Pairings: Excellent with fish dishes.
