Note : A rich and characterful bubble, yet soft. The Pinot Noir in its purity is direct but not sharp.
Vinification & Aging: The grapes are hand-picked in 20 kg crates, usually in the last ten days of August. The whole grapes are pressed with separation of the free-run must (yield
grapes/must: approximately 50%). The first fermentation takes place in steel with indigenous yeasts at a temperature of approximately 16-18 °C. It then rests on the fine lees until the following spring when the tirage takes place. Disgorging takes place after at least 48 months of permanence on the lees, with annual rotation of the stacks. Before being put on the market, it is left to rest for at least 3 months.
