Notes : Incredible nose of beautiful aromatic complexity, ripe fruit and spicy aromas, hints of toasted apples, apple compote and peaches. The taste denotes a subtle combination of structure, length and vivacity. Velvety bubbles. Aromas of pear, brioche and spicy aromas, notes of fresh walnut.

Vinification & Aging : Only grapes from Grands and Premiers Cru. Aging for more than double the time required by the appellation.

Pairings : Any fish, especially sushi and sashimi, seafood, grilled shrimp and lobster. Poultry and white meat. Parmesan, good aged ham.
