Note : Sassicaia is absolutely the icon of Supertuscans and the most famous wine in the world as well as multi-awarded. The flagship of the Italian winemaking tradition, Sassicaia is the result of Mario Incisa della Rocchetta's desire to plant Cabernet Sauvignon and Franc grapes in the Bolgheri estate, as the morphology and climate were very similar to the French area of Bordeaux. Its name derives from the present terrain, impervious and stony, "Sassicaia".

For Sassicaia, the passing of time is certainly an ally and not an enemy.

The nose explodes with aromas of black cherry, ripe berries and all the Tuscan scrub, with a hint of chocolate. The taste is persuasive, intense and elegant, full, with soft tannins and great persistence.

Vinification & Aging: following the harvest that began in mid-September, entirely by hand, the grapes are carefully selected. In the cellar, a further selection of the grapes takes place using a sorting table. This is followed by soft pressing and destemming using a machine that allows the grapes to remain intact. Alcoholic fermentations end in mid-October at temperatures of 26-27°. Malolactic fermentations take place entirely in steel, followed by the wine being placed in French oak barriques, where it ages for an average period of 20-25 months.

Pairings : For meditation.
