Vinification & Aging: The grapes of this special selection come from the south-western area of ​​the Euganean Hills, where the soil is more stony and shallow. In addition to having a higher sugar content, the productions have a higher concentration of components capable of highlighting the structure of the wines to which they will give rise. These products also remain in the consumer's gustatory memory for a long time after having tasted them; the olfactory intensity and roundness give the absolute pleasure in drinking them. Drying of the grapes in crates for 2-3 months, pressing and maceration of skin-must for 6 hours. Pressing using a soft press and slow fermentation in oak barrels.
