Produced with the finest sugar cane honey, Distillery Collection N°1 matures in oak barrels previously used to age Bourbon and Scotch. The Batch Kettle Still was brought to La Miel Distillery in 1959. This semi-artisanal distillation system originated in Canada, where it was used to produce Whisky. The Batch Kettle is a discontinuous distillation system, similar to traditional pot-stills, but with an attached column that replaces the long “swan neck”. It is in this column with various plates that the separation takes place, in a more controlled and precise manner, so as to obtain an organoleptic profile more in line with the expectations of the master distiller.
