Notes : Creamy foam with fine and persistent perlage. On the aromatic level, notes of white-fleshed peach, bread crust and yeasts are detected. Remarkable balance and vivacity typical of Brut.

Vinification & Aging: The 'flower' must was subjected to the first alcoholic fermentation in stainless steel tanks. The second fermentation in the bottle in contact with the yeasts took place over the following 36 months.
