Notes : Nose that expresses great complexity, with balsamic notes of eucalyptus, spices, orange and strawberry. The taste is elegant, well structured and persuasive, with a finish of red fruit. Pleasant flavor.

Vinification & Aging: After a manual harvest, it is vinified at a controlled temperature of 28-30° for 20-25 days. It is then refined in wood, for 18 months in barriques. Further stay in the cellar after bottling for 24 months.

Pairings : It pairs well with red meat main courses that are cooked slowly and slowly, such as salmi, peposi, braised meats. But also grilled meats with prized cuts. It loves game, such as wild boar stew or roast duck. It prefers long and very long-aged cheeses.
