Vinification & Aging: Mechanical harvesting, Temperature-controlled vinification in stainless steel vats. Cold maceration for 5 days and first thermo-controlled fermentation for 10 days. Aging in stainless steel.

Pairings: Perfect with red meats, cured meats and cheeses such as Brie and Camembert.
