Note: A wine of great elegance, fresh and soft on the palate.
Vinification & Aging: Destemming and pressing at controlled temperature and must clarification at low temperature. Stabulation (about 4-6 days of must permanence at about 5°C) in stainless steel tanks. Fermentation in steel between 18°C - 20° C and without malolactic fermentation. Aging on the yeasts until February / March. Aging for 12 months in oak barrels.
We recommend medium aging, between 4 and 6 years.
Pairings: first courses with fish and white meat. A perfect wine as an aperitif.
