Name: Trevenezie IGP

Notes: The scent is reminiscent of spices, especially white pepper. It has a dry and pleasantly aromatic flavor.

Vinification & Aging: Manual harvesting of the grapes, which are destemmed and softly pressed. The free-run must obtained is left to decant for 1-2 days. Only the clear part of the must is decanted and left to ferment in stainless steel tanks at a controlled temperature. The maturation of the wine will continue in stainless steel tanks where a series of batonnage will be carried out at a scalar frequency. This process allows us to obtain a structured wine with intense aromas. The wine will then be bottled towards the end of April or the beginning of May.

Pairings: Excellent with baked or grilled fish and especially with shellfish.
