Notes: Refined wine with a bouquet of wild berries, hints of vanilla, chocolate and tobacco. Round on the palate with important soft tannins, intense aftertaste of raspberry and licorice.

Vinification & Aging: Destemming with light crushing of the grape. Fermentation with native yeasts after preparation of a pied de cuve. Maceration in small fermenters with manual punching down at a controlled temperature for 15-18 days. Aging in French oak barrels for approximately 18 months. In bottle for at least 10 months.

Pairings: Red meats, game, spicy aged cheeses and dark chocolate.
