Notes : A real bomb of aromas on the nose: fruity, persistent, aromas of violets, generous aromas of cherry, generous aromas of black fruits, aromas of black pepper, aromas of licorice, light aromas of wood. On the palate it is aromatic, intense, with an unctuous note. The black and red fruits explode in the mouth again, with hints of licorice. The tannins are dense, elegant, glossy. A wine with a round body, structured and of strong intensity. Good persistence.

Vinification & Aging: All our fermentations take place in thermo-regulated concrete tanks.
The winemaking process is done based on the quality of the harvest. The most common is a maceration of 30 days on average during which the entire process of transforming sugars into alcohol and extracting tannins and color takes place.
Part of our grapes are vinified in 400-liter barrels entirely from the grape until bottling for the SECRETS cuvée . After vinification, it is time for refinement. Traditionally, 75% of the volume will be aged for 12 months in French oak barrels and 25% in vats. A small batch is raised in an amphora.
Few manipulations or actions during this period to let the wine rest.
