Name: Amarone della Valpolicella DOCG
Notes: Intense, vigorous and full-bodied wine, consistent, with clear, fresh aromas. Great structure, with soft and velvety tannins, with an aftertaste of chocolate and vanilla.
Vinification & Aging: Amarone is a noble wine produced from the best bunches of grapes, hand-picked and then left to dry in special trays for 3-4 months. After drying, the grapes increase their sugar concentration by 25-30%. In January, the grapes are pressed and left to ferment for about 25-30 days. The product is then transferred to steel tanks. Once malolactic fermentation is complete, the wine is left to mature in barriques for 24-36 months and after bottling, it is aged in the bottle for a few months. This type of product is obtained from a particular selection of grapes and only in the best vintages.
Pairings: Excellent with red meats, game dishes, grilled meats, braised meats, mature cheeses and also as a conversation starter.
