Notes: An elegant and full wine, with hints and aromas of berries. On the palate it is harmonious and well structured, the tannins are persistent and at the same time soft.
Vinification & Aging: Destemming in a protected atmosphere, alcoholic fermentation at a controlled temperature (28-30°C) with maceration for a total of approximately 22-25 days. Targeted pumping over and delestage maximize the extraction of color, aroma and tannic structure. Complete malolactic fermentation in new French oak tonneaux. Aging for 38 months, of which at least 18 in new French oak tonneaux.
Pairings: aromatic stews and stews of red meat and game, roasts of furred game, feathered game and mature cheeses.
