Notes: Aromas of strawberry, black cherry and cherries with a spicy finish of black pepper. The taste is fresh, with excellent freshness and fragrance, enveloping with a good final persistence.
Vinification & Aging: Destemming and pressing in a controlled atmosphere with immediate reduction of temperature. Pre-fermentation cold maceration for 48 hours. Fermentation with maceration of about 10 days at progressive temperatures (from 18°C to 28°C). Pumping over and délestage depending on the vintage and the fermentation process. Racking and soft pressing of the fermented marc. Natural malolactic fermentation in steel, on average in 15-20 days at 22°C. Aging in steel on the fine lees for about 6 months.
Pairings: mature cheeses, grilled meats, roasts, red meats in general, wild mushrooms and game dishes .
