Name : Vin Santo del Chianti Classico DOCG

Notes : Fruity, ethereal, with hints reminiscent of bitter almonds. Structured, complex, and harmonious, with initially sweet notes that evolve into an intense and very persistent finish tending to dry, leaving the mouth perfectly clean.

Vinification & Aging: The grapes are carefully selected, favoring whole bunches in order to balance both the acidity and the sugar content in them. The harvested grapes are hung on wires for natural drying in the air and sun, which lasts until December. After the delicate pressing operation, the must obtained is left to ferment in typical wooden barrels, called “caratelli”, of small dimensions. The alcoholic fermentation is long and slow. The aging in the caratelli takes place for a period of about 10 years.

Pairings : Ideal for Cantucci, Ricciarelli, Panforte, Dry Pastries, Gorgonzola and other blue cheeses, Foie gras.
